Rodrigo's Bakeshop: Our Story
His hands tell the story of dedication—slightly rough from years of early mornings, flour-dusted and skilled in the art of creating the perfect Filipino bread. What began as small neighborhood bakeries across different barangays in Pampanga eventually led him to opportunities abroad, where he mastered new techniques while keeping his Filipino baking roots close to heart.
Behind every warm loaf at Rodrigo’s Bakeshop is a story of passion, perseverance, and the Filipino spirit of “pangarap” (dreams).
Rodrigo Coles, our head baker and owner, started his journey over 20 years ago with nothing but a small pugon (traditional oven) and determination. Growing up in a family where food was the center of every gathering, Rodrigo learned early on that bread wasn’t just food—it was a way to bring people together.



Our Baking Philosophy
Puso, Pagmamahal, at Panahon
At Rodrigo’s, we believe that the best Filipino breads are made with three essential ingredients:
puso (heart), pagmamahal (love), and panahon (time).
Every morning at 4:00 AM, when Angeles City is still asleep, our ovens are already warming up. We use techniques passed down through generations, combined with carefully selected ingredients to create breads that taste like home.
Our philosophy is simple:
- Freshness is non-negotiable. We bake in small batches throughout the day.
- Traditions matter. We honor classic Filipino recipes while adding our special touch.
- Community comes first. We bake for neighbors, not just customers.

The Baker Behind the Bread
Rodrigo’s story goes beyond baking—it’s about family. His skilled hands and dedication to his craft put his children through school and provided for his family through the years. The flour that dusted his apron built futures and opportunities.
Now, with his children grown and successful, Rodrigo has returned to his first love—creating the breads that remind Filipinos of simpler times, of breakfast tables with family, and afternoon meriendas with friends.
